So, Michelin UK gave stars (again) to pubs and even to a tapas place…it would make sense to see this progressive approach reflected in some other upcoming guides…In Belgium for instance, I wonder of the likes of Bruut, Oak and Willem Hiele and many more top places will also be rewarded for their hard work and brilliant cooking, despite the fact that they don’t tick the regular Michelin Belux boxes… The world of eating is changing and so should Michelin (in all countries, not just in a few)
